Labneh with brown butter, walnuts and sage.
Heat 80 grams of butter in a saucepan. Add a few sage leaves and bring the butter to a boil. At first, the water in the butter will evaporate and the butter will start to foam. When the vapor and foam disappear, the butter begins to brown quickly. Once the butter is brown take it off the heat and throw in a teaspoon of Urfa Biber (available at Turkish stores) and about 60 grams of coarsely crushed walnuts. Attention! The butter is very hot now. Let the brown butter cool slightly and spoon over the labneh. Serve with sweet potato chips, homemade or not homemade, or flatbread.
